A slice of heaven in a banana bar

One of our family’s favorites are grandma’s banana bars. I had the pleasure of knowing my husband’s grandma for the first 15 years of our marriage. She loved her family well and enjoyed baking and cooking for them often. These banana bars are so very moist and almost melt in your mouth, and the cream cheese frosting is literally the icing on the cake!

One of my favorite things about following her recipe is that it is written in her hand writing. Ingredients such as oleo give me such a sense of nostalgia. Baking always makes me feel close to generations of the past. It warms my heart to think of her making these banana bars for her family so many years ago as a young mother herself. I imagine her in the kitchen with little ones at her feet.

Norma’s Banana Bars

Ingredients

  • 1/2 cub butter (Oleo)
  • 2 eggs (I used duck eggs, highly recommend for added fluffy texture and rich taste)
  • 3/4 cup sour cream
  • 2 ripe bananas
  • 1 tsp. vanilla
  • 2 scant cups flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt

Directions– Cream together butter and sugar. Add eggs, vanilla, sour cream, and bananas. Sift dry ingredients together and add gradually until combined. Bake in jelly roll pan at 350 for 30 minutes or until golden brown. Cool and frost.

Frosting

  • 1 3/4 cup powered sugar
  • 4 oz. cream cheese softened
  • 1/2 tsp. vanilla
  • 1/4 cup butter softened
  • 1/4 tsp cinnamon (my added ingredient 🙂

Mix together until creamy. Frost when banana bars are cool.
